What’s your favorite kind of Girl Scout Cookie??? Samoa Girl Scout Cookies are ours! This is the tasty, vegan and gluten-free baked oats version. And let me tell you, it is AMAZING. Low sugar, balanced and filling breakfast. Give this a try and be ready to have your mind blown!

Ingredients

  • 1/2 cup Pinole Chia Oatmeal Original flavor
  • 1/2 cup milk
  • 1/2 ripe banana
  • 1 scoop vanilla protein powder
  • 2 tsp vanilla extract
  • 1 tablespoon coconut flakes
  • 1 tsp baking powder
  • Pinch of salt
  • Caramel details:
  • 1 tablespoon cashew butter
  • 1 tsp coconut oil
  • 2 tsp maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Blend together Pinole Chia Oatmeal, milk, banana, protein powder, vanilla extract, coconut flakes, baking powder and salt
  2. Pour half of mixture into a greased ramekin, put a spoonful of caramel sauce in the middle and pour the rest of the batter on top.
  3. Bake at 400 degrees Fahrenheit for 20 minutes.
    Top your creation with more caramel sauce, chocolate sauce and more coconut flakes!
