These No-Bake Pumpkin Spice Energy Bites are easy to make, full of powerhouse ingredients, and irresistibly delicious!
Ingredients
- 1 ¼ cups Pinole Chia Oatmeal
- 2 tbsp pumpkin seeds or raw walnuts
- 2 tbsp peanut butter
- 1/4 tsp cinnamon or pumpkin pie spice
- Salt (Pinch)
- 1/4 cup canned pumpkin puree
- 1/2 tsp vanilla extract
- 1/2 cup of pitted dates (OR 1/4 cup honey)
Instructions
- Add all ingredients to a food processor
- Pulse until well-mixed
- Roll into 1 inch balls.
- Freeze until solid and store in the freezer or refrigerator.
Tips
As you mix, you want the mixture to be soft but not too sticky.
It should be sticky enough so that when you roll up the balls, they don't fall apart.
If they aren’t sticking together well as you roll them up, place the mixture in the fridge for 15 minutes and try again. Still too sticky? Add a few more tablespoons of oats.
