Peanut Butter Honey Overnight Oats

This salty, sweet combo is an absolute delight. We combine peanut butter and honey to make a tasty, high-protein breakfast.

Ingredients

  • 1/2 cup Pinole Chia Oatmeal
  • 1/2 teaspoon cinnamon
  • 1/2 medium banana, mashed
  • 1 tablespoons peanut butter
  • 1/4 cup nonfat Greek yogurt, plain
  • 1 cup milk
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract

Instructions

  1. First, mash the banana in a large bowl.
  2. Then add peanut butter, Greek yogurt, milk, honey, vanilla extract; mix until smooth.
  3. Add in Pinole Chia Oatmeal and cinnamon; mix again
  4. Place in the refrigerator, covered, for at least 2 hours or overnight.
  5. Mix well and serve cold!
  6. Add fun toppings (We added the other half of banana)

Tips

*Other toppings I recommend: (As pictured above) Cacao nibs, more peanut butter & the rest of your banana

*This should last for up to 4 days in the refrigerator

*We used a 2:1 liquid to oatmeal blend ratio to create a porridge-like consistency. If you want a thicker texture, add slightly less milk
