These amazing, gooey Flourless Oatmeal Chocolate Chip Cookies made with Pinole Chia Oatmeal are so soft and chewy! This gluten free cookies recipe will be your go-to when you're looking for a healthy dessert to make with Pinole Chia Oatmeal.
Ingredients
- 3 cups Pinole Chia Oatmeal (or 1.5 Pinole Chia Oatmeal & 1.5 regular gluten free oats)
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup creamy peanut butter
- 1/2 cup dark brown sugar
- 1/2 cup granulated sugar
- 1–1/2 teaspoons baking soda
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup chopped walnuts
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350°F.
- Using electric mixer, beat the butter, peanut butter, sugar and brown sugar until smooth
- Add eggs and vanilla extract and beat until well combined
- Add the oats and baking soda and mix on low speed
- Add walnuts and chocolate chips to mixture
- Drop two-tablespoon sized portions of cookie dough a few inches apart onto lightly greased or parchment-lined baking sheets
- Gently flatten the top of each scoop of dough to the desired thickness and width
- Bake cookies for 10-12 minutes or until golden brown.
- Let cool for 5 minutes on baking sheets!
