These amazing, gooey Flourless Oatmeal Chocolate Chip Cookies made with Pinole Chia Oatmeal are so soft and chewy! This gluten free cookies recipe will be your go-to when you're looking for a healthy dessert to make with Pinole Chia Oatmeal.

Ingredients

  • 3 cups Pinole Chia Oatmeal (or 1.5 Pinole Chia Oatmeal & 1.5 regular gluten free oats)
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1–1/2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup chopped walnuts
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Using electric mixer, beat the butter, peanut butter, sugar and brown sugar until smooth
  3. Add eggs and vanilla extract and beat until well combined
  4. Add the oats and baking soda and mix on low speed
  5. Add walnuts and chocolate chips to mixture
  6. Drop two-tablespoon sized portions of cookie dough a few inches apart onto lightly greased or parchment-lined baking sheets
  7. Gently flatten the top of each scoop of dough to the desired thickness and width
  8. Bake cookies for 10-12 minutes or until golden brown.
  9. Let cool for 5 minutes on baking sheets!
