The combination of mint and rich chocolate comes together in these Mint Chocolate Chip Baked Oats! They are just as nourishing as they are tasty.

Ingredients

  • 1/2 cup Pinole Chia Oatmeal Original
  • 1/2 cup plant milk
  • 1/3 cup previously roasted cubed sweet potato
  • 1 scoop vanilla protein powder
  • 1 tsp peppermint extract
  • 1 tsp baking powder
  • 1 dropper full of liquid chlorophyll (for green color & extra health benefits!)
  • Chocolate Chips

Instructions

  1. Blend together Pinole Chia Oatmeal, milk, sweet potato, protein powder, peppermint extract baking powder and chlorophyll
  2. Pour mixture into a greased ramekin and top with chocolate chips!
  3. Bake at 400 degrees Fahrenheit for 20 minutes.
