Are you ready for an island vacation? We sure are. But if you're too busy working, these healthy baked oats may suffice (for now). Mango and coconut go so well together and a drizzle of cream cheese frosting on top was LITERALLY the icing on top to this amazing healthy baked oatmeal recipe! Give this fruity tropical flavor combo a try!

Ingredients

  • 1/2 cup oats (I used @thepinoleproject original)
  • 1/2 cup milk (We used flax milk)
  • 1/2 ripe banana
  • 1 scoop vanilla protein powder
  • 1 tbsp coconut flakes
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • 1 Mango
  • FOR TOPPINGS
  • Coconut Oil
  • Water
  • Honey
  • 1 tbsp vegan cream cheese
  • 1 tsp liquid sweetener

Instructions

  1. Blend together your Pinole Chia Oatmeal, milk, banana, protein powder, coconut flakes, vanilla extract, baking powder, salt and a couple mango chunks.
  2. Pour mixture into greased ramekin and bake at 400 Fahrenheit for 20 minutes.
  3. While it’s baking, cube up 1/2 a mango and sauté it with some coconut oil, water and honey over medium heat for about 5 minutes until it’s nice and gooey.
  4. In a small plastic bag, add 1 tbsp of vegan cream cheese and 1 tsp of liquid sweetener and mix by squeezing it up in the bag. Cut a small hole in the corner of the bag.
  5. Top your baked oats with the sautéed mangos, more coconut flakes and ice the top with the cream cheese frosting!
  6. Enjoy this beautiful tropical baked oatmeal breakfast!
