Lemon poppyseed muffins are so delicious and have all the summer feels! These baked oats taste just like those muffins but they are 10x better. Trust me! Plus, they're healthy, high-protein and packed with fiber!
Ingredients
- 1/2 cup Pinole Chia Oatmeal Original
- 1/2 cup milk (plant based)
- 1/2 ripe banana
- 1 tbsp of poppy seeds
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- Pinch of salt
- Juice of 1 lemon
- 1 tsp lemon extract
- 1 tsp vanilla extract
- FOR GLAZE
- 1 tbsp cream cheese (dairy-free)
- Coconut nectar
- More poppy seeds
Instructions
- 1. Blend together Pinole Chia Oatmeal, milk, banana, protein powder, baking powder, salt, juice of 1 lemon, lemon extract and vanilla extract
2. Pour mixture into greased ramekin and mix in 1 tablespoon of poppy seeds!
3. Pop in the oven and bake at 400 degrees Fahrenheit for 20 minutes.
4. We topped our oats with cream cheese, mixed with 1 tsp of coconut nectar, and topped with more poppy seeds!
5. Enjoy this summery treat!
