This Key Lime Pie Baked Oats Recipe is a healthier way of eating your favorite dessert for breakfast! For me, this is the the perfect combo! It strikes the balance of creamy, sweet, and tangy with just a few simple and healthy ingredients.

Ingredients

  • 1/2 cup Pinole Chia Oatmeal Original
  • 1/2 cup milk (We used protein flax milk)
  • 1/2 ripe banana
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • Pinch of salt
  • Juice of 1 whole lime
  • Lime zest from 1 whole lime
  • 1 tsp lemon extract
  • 1 tablespoon dairy free cream cheese
  • For toppings (optional): almond flour cookies or other type!

Instructions

  1. Blend together your Pinole Chia Oatmeal, milk, banana, protein powder, baking powder, salt, juice, lime zest, lemon extract and cream cheese
  2. Pour the mixture into a greased ramekin and top with more lime zest.
  3. Bake at 400 degrees Fahrenheit for 20 minutes.
  4. We recommend topping this with crushed up cookies! Biscoff would be amazing, but as a Gluten free alternative, we used almond flour cookies and they were amazing!
  5. Top with a slice of lime if you’re feeling ✨extra✨
