This chocolate chip cookie dough baked oatmeal recipe is a filling and healthy breakfast that tastes like a gooey homemade double chocolate chip cookie, hot from the oven!
Ingredients
- FOR OATMEAL BASE
- 1/2 cup Pinole Chia Oatmeal Original flavor
- 1/2 cup milk (We used flax milk - more FIBER)
- 1/2 banana
- 1 scoop chocolate protein powder
- 1 tablespoon cacao powder
- 1 tsp baking powder
- Pinch of salt
- Chocolate Chips
- FOR COOKIE DOUGH BITES
- 1/2 cup dairy free Greek yogurt
- 2 scoops vanilla protein powder
- 2 tablespoons Cashew butter
- Pinch of salt
- 1 tablespoon brown sugar
- 2 tablespoons chocolate chips
Instructions
- Blend together your Pinole Chia Oatmeal, milk, banana, chocolate protein powder, cacao powder, baking powder and salt.
- Pour into a greased ramekin and top with some chocolate chips.
- Bake at 400 degrees F for 18 minutes.
- FOR COOKIE DOUGH BITES
Mix together your yogurt, vanilla protein powder, cashew butter, salt, brown sugar and chocolate chips - Mix together until a dough forms, and then roll it up onto some wax paper, and twist the ends of the wax paper and refrigerate for at least 3 hours.
- Now you have some healthy, low carb, low sugar cookie dough!
- Create little bite size balls of cookie dough and top your baked oats masterpiece with as much as you want.
- ENJOY!
Tips
The cookie dough bites need to be refrigerated for at least a few hours so we prepared ours the night before!
