These amazing Chocolate Peanut Butter high fiber, high protein muffins are SO delicious! Made with Pinole Chia Oatmeal, they are an excellent way to get in your fiber and protein first thing in the morning!
Ingredients
- 2 cups Pinole Chia Oatmeal Original
- Cinnamon
- 2 tsp baking soda
- Salt
- 2 eggs
- 1 banana
- 1/4 cup honey
- 1 cup cashew milk
- Dash of vanilla extract
- 1/2 cup natural peanut butter
- Cocoa chips
- 1 scoop Chocolate Protein Powder (optional)
Instructions
- Preheat oven to 350 degrees F
- Into a bowl place your eggs, mashed banana, honey, cashew milk, vanilla extract, peanut butter and cocoa chips. Mix it up!
- Into another bowl add your Pinole Chia Oatmeal, Cinnamon, baking soda, salt and mix!
- Combine dry and wet ingredients and mix!
- If you're adding protein powder, mix in now!
- Scoop muffin batter evenly among prepared muffin cups, filling each one a little over halfway full.
- Bake at 350 degrees for 22 minutes
