What if I told you, you could have a nutritious, healthy breakfast…. That also tastes like dessert? You’d be like what?! How?! Well, today I’m giving you the inside scoop on how to make carrot cake baked oats using Pinole Chia Oatmeal. This recipe is simple yet packs so much flavor and it’s a tasty way to get a serving of vegetables at the start of your day!

Ingredients

  • 1/2 cup Pinole Chia Oatmeal Original
  • 1/2 cup milk (We used flax milk)
  • 1/2 ripe banana
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup shredded carrots
  • 2 tbsp raisins
  • chopped pecans
  • brown sugar
  • 2 tbsp vegan cream cheese (or regular)
  • 1 tsp liquid sweetener
  • Splash of vanilla extract

Instructions

  1. Blend together your Pinole Chia Oatmeal, milk, banana, protein powder, baking powder, cinnamon, nutmeg, ginger powder, vanilla extract and salt
  2. Pour the oat mixture into a greased ramekin and mix in your shredded carrots, raisins and chopped pecans
  3. Sprinkle some brown sugar on top
  4. Bake at 400 degrees Fahrenheit for 18 minutes
  5. While it’s baking, make your cream cheese frosting!
  6. Mix together vegan cream cheese, liquid sweetener and a splash of vanilla extract
  7. Top your baked oats with a big dollop of your cream cheese frosting.
  8. ENJOY!
