This Blueberry Banana Baked Oatmeal recipe is incredible! So moist and delicious, it's the perfect breakfast when you're craving something sweet and healthy in the morning. It's easy to make, gluten-free and dairy free. Baked oats for the win!

Ingredients

  • ½ cup Pinole Chia Oatmeal Original
  • 1 scoop vanilla protein powder
  • 1/4 cup unsweetened almond milk
  • ½ ripe banana
  • 1 egg
  • ¼ teaspoon baking powder
  • Pinch of cinnamon
  • Pinch of sea salt
  • 1/4 cup Blueberries (Fresh or Frozen)

Instructions

  1. Preheat oven to 350°F.
  2. Blend all ingredients except for the blueberries into a blender and blend until fully combined.
  3. Pour batter into greased baking dish or ramekin. I used a mini loaf pan but any small oven-safe dish works.
  4. Top with blueberries and bake at 350°F for 25 minutes or until an inserted fork comes out clean.
  5. Enjoy these amazing baked oats!
