Is it your birthday?! These amazing Birthday Cake Baked Oats will make you feel like it is. This baked oatmeal is a healthy, gluten-free breakfast option that will have you excited for the morning!
Ingredients
- 1/2 cup Pinole Chia Oatmeal Original
- 1/2 cup plant based milk
- 1/3 cup previously roasted cubed sweet potato
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- Pinch of salt
- 1 tsp vanilla extract
- 1 tsp cashew butter
- 1 tbsp sprinkles
- For frosting:
- 1 tablespoon vegan cream cheese (or regular)
- 1/2 tablespoon yogurt (plant based or regular)
- Splash of vanilla extract
- 1/2 teaspoon sweetener
- More sprinkles
Instructions
- Blend together your Pinole Chia Oatmeal, milk, sweet potato, protein powder, baking powder, salt, vanilla extract and cashew butter
- Pour mixture into greased ramekin, and then mix in 1 tablespoon of sprinkles.
- Bake at 400 degrees Fahrenheit for 20 minutes.
- Meanwhile make your frosting: Mix cream cheese, yogurt splash of vanilla extract and sweetener
- Top your birthday cake oats with your frosting and sprinkle with more sprinkles! Enjoy!
